Pineapple fried rice 2 ½ cups rice ½ cup water ½ cup pineapple juice ½ cup chicken stock 1 cup water 1 teaspoon salt 3 tablespoons oil 500g shrimp (seasoned with 1 teaspoon spice mix) spice mix: *½ teaspoon each of salt, garlic powder, onion powder, pepper. handful of chopped onion 2 garlic cloves (minced) Thumb sized ginger(minced) 2 carrots 8 string beans ½ red bell pepper 2/2 green bell pepper Spicy scotch bonnet pepper(atarodo) Bunch scallions (Veggies seasoned with 1 teaspoon spice mix) Spice mix 1 teaspoon each of garlic powder, onion powder, bouillon cube, paprika ½ teaspoon salt. #pineapplefriedrice #pineapple
