Lets make this delicious and easy beef stew curry with potatoes and cabbage. A dish that you can do on any day of the week and you and your family will enjoy it. For this recipe you beef chuck roast or any beef suitable for long cooking. INGREDIENTS 3 lb. Beef chuck pot roast, cut into medium bite size pieces 1 Yellow onion, peeled and diced 1 tbs Garlic 1 tbs Ginger, minced 1 tbs curry powder 1 tbs coriander 1 tsp cumin 1 tsp turmeric 1/2 tsp chili powder ( or more to your taste ) 1 tbs tomato paste 1 large bay leaf or 2 small 4 cups water or beef stock 1tbs lemon juice 1 small bunch cilantro, chopped for cooking and garnish 6 - 8 Potatoes, medium sizes, peeled and quartered 2 carrots , peeled and cut bite size 1 Yellow bell pepper, cut bite size 1/2 small green cabbage Salt and pepper to taste.
